Kid-friendly Quiche

This family favourite is kid-friendly and also a great way to use up any leftover veges in the fridge.

Prep time: 45 minutes

Serves: 4

Ingredients

1 packet shortcrust pastry

Olive oil

250 grams Grandpa’s Bacon or your choice

1 cup grated tasty cheese

8 eggs

300 ml pouring cream

Salt and pepper to taste

3 tomatoes, thinly sliced

Instructions

Step 1

Preheat the oven to 200 degrees. Brush your quiche dish with some olive oil to avoid sticking. Line the dish with the short crust pastry. Use baking beads or otherwise line the pastry with baking paper and cover with rice. This is so the pastry cooks but doesn’t rise. Bake for 15 minutes.

 

Step 2

Meanwhile, in a non stick pan, cook the bacon until golden. Set aside and allow to cool.

 

Step 3

In a bowl, combine eggs, salt and pepper and pouring cream. Once the bacon is cool, roughly chop into bite-sized pieces.

 

Step 4

Remove pastry from the oven. Remove the baking beads or rice and sprinkle the bacon and cheese over the pastry. Pour the egg mixture over and in a single layer place the sliced tomatoes on top. Cook for 25 minutes or until the centre is set.

 

Step 5

Serve hot or store once cooled for lunch boxes the next day.
